Digging up old favorite: Carob brownies

When one of my readers — Thank you, Ken Zavoskey! — wrote asking for tips on baking with carob, he mentioned the wonderful brownies he used to buy at my bakery. My first thought was how I now prefer cocoa. But I dug up the carob recipe to try it again after several years and loved the result. It’s tasty, with a fudgy texture.
