Vegan Recipe Oatmeal Muffins

Seems like I’m eating more muffins lately partly because you can make some great vegan muffins and they are very good. I take Niaspan at night right before I go to bed and they say to keep from flushing so bad you should eat a low fat snack before taking the Niaspan. And what a better snack than a low fat vegan muffin. Here’s another great muffin recipe.

  • 1/2 tsp Cinnamon
  • 1/4 cup Pureed Banana
  • 1/4 cup Canola Oil

I decided to go on a vegan diet after watching Forks ove Knives and seeing how people had changed their health by eating a plant based diet. Having heart problems I thought this was a very good choice.
