Vegan Quickbread with Dates and Walnuts

Consider it for your Easter table, or make your mother very pleased when you present it to her on May 11th.   Vegan Date Nut Bread Serves 8 to 10 1 1/2 heaping cups pitted medjool dates, chopped into small pieces  2 cups boiling water 2 cups all-purpose flour 1 tablespoon baking soda 1 teaspoon cinnamon 1/4 teaspoon sea salt 2/3 cup organic cane sugar 1 teaspoon apple cider vinegar 3/4 cup almond or soy milk 1/2 cup melted coconut oil 1 tablespoon flax meal, mixed with 3 tablespoons warm water and allowed to thicken for a few minutes 1/2 cup chopped walnuts Preheat oven to 350° F. Pour the boiling water over the dates and allow them to sit for at least ten minutes. As the dates soak, whisk together the flour, baking soda, cinnamon, salt, and sugar.
